Why do you not have to rejet a stock engine as the temp changes outside?
 
You don't necessarily HAVE to rejet for the colder weather, but it'll run better, start easier, and it will be less stressful on the engine.

It's because cold air is more dense than warm air. So as the air temperature gets colder in the winter, your engine pulls in more air with each gulp, but only the same amount of fuel, so the mixture becomes leaner than the ideal ratio.
