If I'm out riding and run 3/4 to WOT for about 5 minutes, I get bog, until it shuts off. Wait about 2 minutes after it shuts off, and it'll run again for about the same distance. If I just putt around on it staying under 4th gear, it does fine. I would like to think its running lean, but what do I need to change besides the jetting?
 
Do a "plug chop"... like they do in NASCAR.

Get 'er hot and run WOT like you did, down a big straightaway, and "chop" the ignition off without idling. Remove and check plug. Reading will give you truly what the main jet is metering.

Sounds like the float level might be a wee bit low, or the petcock screen may be getting plugged, too. May be draining faster than it can refill the carb bowl.
 
the float level sounds like a real possibility. I may do the plug chop too just to see what it comes out as.
 
sounds like the fuel inrush does not match the fuel outrush check for plugged petcock and plugged up carburator vent hoses
